The food-grade silicone mat lays over the cooking surface and down the side walls, covering the steel to help protect it from moisture, dust, pollen and debris between cooks. Because the mat is cut to the griddle dimensions, it stays in place rather than lifting in wind the way a loose cover can. Covering the flat top between sessions helps preserve the seasoning, which reduces scrubbing and re-seasoning before the next cook. Let the griddle cool completely, then lay the mat over the surface; to cook, remove the mat and wipe the griddle down. Measure your griddle before ordering, because this cover fits 28 inch Omnivore models only and does not fit extra-large griddles. The mat is dishwasher safe, or wash it with warm soapy water and dry it before storing. This is a protective cover and is not intended for use as a cooking surface.
